Egg Benedict Recipe


The sauce:
2 Egg yolks
2 lemon juice, splash
vinegar, big splash
butter, knob
salt and pepper
2 english muffin
2 turkey ham
2 slices rocket

Directions:
1. Place egg yolks, vinegar, lemon juice and butter in a pan. Heat,season and whisk.
2. Poach the eggs, (Smug tip: If you're using a normal pan, spin the water as you put in the egg to help it bind).
3. Toast the muffin
4. Place the ham and rocket on the muffin, add the poached egg and pour on a little Hollandaise sauce.
